Coconut Sesame Chicken

1/2 c coconut milk
1 t five spice powder
1 t garlic powder
1/2 c chicken stock
Sesame oil
Salt & pepper to taste
Splash of organic soy sauce or tamari, low sodium preferred
4-6 boneless chicken breasts

>> Coat a heated frying pan with a couple turns of sesame oil. Add chicken & cook til seared. Mix well the rest of the ingredients, add to chicken & simmer til sauce thickens & chicken is cooked through. Sprinkle with toasted sesame seeds. Serve over basmati rice.

Jar-aholics anonymous... A punny.....

So I was reading Laura's post on jars..... Which led me to Jodi's post on jars..... Which I showed Hubba..... Which led to a discussion between Hubba & I...... yup, on jars. And he said I didn't have that many jars yet..... (YET!!!)..... And I told him I didn't have room for that many jars (Oh Lord, how I wish I did). And he says "Oh, Honey, you'd be knocking out walls with that many jars. Who needs a bathroom? Bathroom? What's that?" And I said "Ooooo, for real? We only need ONE, right?" And he says "One jar? To use as a bathroom....."

I married a smart man.....

Now I'm off to find room for MORE jars!!!!

I don't know how often I'll do this as I'm bad about keeping up with blog memes, carnivals, etc. But I thought I'd do this this week as my kitchen has been hopping!

Aside from my typical ferments (kraut, water kefir, kombucha, etc) I've been canning a great deal!

The last couple of weeks I've been able to get my hands on organic peaches by the case & have been able to teach 3 ladies how to can with these. A few days ago I bought a case of semi-local, organic apples. Today I'm working on winter meals- beef stew, chicken stock & chicken soup (all natural chicken, organic veggies & herbs, etc); chili made with all natural beef & organic ingredients. I've been picking like a mad woman from my own organic garden (can't get more local than that!) & dried some zuke chips. Nice!!!!

The list is huge of what I've been able to stash in my canning pantry:

Peach jam, peach butter, peaches, peach puree, applesauce (cinnamon apples soon to come), chili, chicken soup, chicken stock, grape juice, turnips (locally grown & not by a mass-producer).

Unfortunately, we've been having issues with our computer..... still..... so I don't have many pics on the computer to share. I'll share a couple that I do I have!

Peach Butter


4-4.5 pounds peaches
4 cups sugar (I used cane sugar)

Wash & blanch peaches. The firmer they are, the longer they'll need to blanch. Remove your peaches from your boiling water & put in ice cold water. Peel, pit & slice peaches. Put 1/2 cup water in a large saucepot & add peaches. Simmer until peaches are soft. Puree, using a food processor or food mill, but do not liquefy. Measure 2 quarts of peach pulp.

Combine peach pulp & sugar in saucepot & cook until thick enough that it rounds up on a spoon. Stir frequently to avoid your mixture sticking. Ladle hot butter into hot jars, leaving 1/4" headspace. Remove air bubbles. Wipe rims of jars & put your lids & rings on, turning just til you feel resistance (if you tighten your lids down too tightly, you may have trouble removing the later). Process your jars in a water bath canner for 10 minutes, adjusting your time according to your altitude.

If you prefer spiced peach butter, add 1/2-1 teaspoon of ginger, nutmeg & cinnamon (or a variation) at the same time you add your sugar.

My son, the evangelist....


So we have this friend. She doesn't share the same beliefs we do. She respects ours, even does prayers before meals with us, etc. We're appreciative of that. However, 5 year olds don't understand..... Here's how it went down:


Keenan: Miss Mo? Are you a Christian?


Mo: No, honey, I'm Pagan


Keenan: Oh. Do you believe that Jesus Christ died on the cross for your sins?


And without taking a breath or letting anyone interrupt......


Because if you believe that God loves you & that Jesus Christ died for your sins, you'll go to Heaven.

A new kitchen appliance.....

And not by choice, mind you. A couple weeks ago I was trying to cook something & NONE of the burners would work..... So I tried the stove...... 30 mins on 350º & the temp reached 200º. Hm, well, off to the appliance stores in town, a few perusals online & our best bet was a Frigidaire for $508 delivered. We cooked outside on the grill & in the toaster oven that night & the next day our order was placed & our new stove was delivered just after 1pm.

I chose this stove, because a few years ago we had one in a rental home & I LOVED it! The only drawback was the colour. I wanted white. They only had bisque. Small price to pay to have a working stove the same day and the model I wanted. It's actually not too bad now, seeing it IN the kitchen.

So I'm a little excited. Besides, Hubba said for $500, I BETTER blog about the new stove :D
