I LOVE canning, growing, preserving, shopping bargains to provide for my family. It IS a wonderful feeling!! The most glorious feeling, though, is knowing that it is ALL for the Glory of GOD!!!

The meatloaf muffins are mini meatloaves. Make your fave meatloaf mix & scoop into muffin tins, bake about 1/2 the time you would a normal sized loaf (about 30 minutes).

And don't be envious. I'm a procrastinating schmuck, LOLOL!!!!

Awwww, Thank you for answering my question!
You know... "meatloaf muffins" is something I had never even considered ~ but they would be perfect my day care kids - as well as my meatloaf loving old guy!
Now I have all sorts of ideas running through my cute little head...Meatloaf muffins "frosted" with mashed 'taters and topped with chopped tomatoes, or artfully frosted & topped with a piece of pimento or stuffed olives... maybe surrounded on a plate by buttered baby potatoes with chives... The list is endless!

BTW... My son was always called "Tater" (although his girlfriend now calls him Spud or Mr Potato Head) and since I'm his mama.. well, you get the idea!
mrpotatoheadmama just doesn't have the same panache, does it!
